Quick Chocolate Chocolate-Chip Cookies

These are sooo great to whip up in a pinch or when the craving hits. Mom gave out this recipe back in 1997 and Amanda gave me the great idea to use whatever kind of cake-mix you have and whatever kind of "chip" you like. For instance, lemon cake mix with crushed up lemon heads; funfetti cake with crushed red hots; spike cake with cinnamon chips...the possibilities are endless! I like to stock up on cake mix when they are around 99 cents a box and baking chips around the holidays - if I can keep them that long!

18 1/4 oz. box chocolate cake mix

1/2 cup vegetable oil

2 eggs

2 cups (12 ox pkg.) chocolate chips, peanut butter chips, white chips or M&M's


3/4 cup chopped nuts (optional)


Combine cake mix, oil and eggs in large bowl. Stir in chips and nuts, if using. Drop by rounded tablespoons onto ungreased baking sheets. Bake in preheated 350 deg. oven for 8-10 min, or until centers are just set. (They don't always look done, especially if using chocolate.) Let stand for 2 minutes on the cookie sheet; remove to wire racks to cool completely.
