Mary Rae used to whip these bad boys up for her family all the time, even with her busy schedule. I struggle with yeast, but these always turn out for me.
2 pkgs. or about 2 Tbsp. yeast
1/2 c. warm water
1 Tbsp. sugar
Dissolve yeast in warm water with 1 Tbsp. sugar. Let it bubble and get all nasty.
1 c. milk
1/3 c. shortening or oil
1/3 c. sugar
2 tsp. salt
2 eggs, well beaten
4-5 cups flour (usually, I substitute 1-2 cups of wheat flour for white)
Scald milk (get it pretty warm; you can use the microwave) and add shortening, sugar, salt and eggs. Add flour and make soft dough (I do this all in the kitchen mixer). Take half the dough and roll out like a pizza crust, in a circle. Spread with about 1 Tbsp. softened butter. Cut into pie shaped wedges (12 per half) and roll it up into a crescent shape, starting at the wide end. Place on a baking sheet and cover with a hand dowel. Let rise for 1 1/2 to 2 hours (or through church in a cupboard; faster in warmer places). Bake at 400 deg. for 8-10 minutes. Makes about 24 rolls
