Sopaipillas

2 cups flour
1/4 c. shortening
1 Tbsp. baking powder
1 tsp. salt
2/3 c. whole milk
1/4 c. confectioners' sugar
1 tsp. cinnamon
vegetable oil for frying

1. in a bowl, with a fork or pastry blender, mix flour, shortening, baking powder, and salt to resemble coarse crumbs. Add milk; stir until dough holds together. Turn dough onto lightly floured surface and knead until smooth, about 3 minutes.
2. With floured rolling pin, roll half of dough into 12" x 9" rectangle; cut into twelve 3" by 3" squares. Repeat with remaining dough.
3. In a cup, mix sugar and cinnamon; set aside. In 10" skillet, heat 1" oil over medium-high heat to 400 deg. F on deep-fry thermometer. Fry 4 squares at a time, turning with slotted spoon as soon as they rise to the surface and then turning 2 or 3 times until golden and puffed. Drain squares on paper towels.
4. Sprinkle warm puffs with sugar mixture and serve.
