Gehrig loves spaghetti and he requested this for his 10th birthday dinner, with great, big meatballs.
This recipe comes from one of my favorites Set for Life. It includes great, real life family recipes, often using ingredients from the garden.
1/2 pound extra-lean ground beef (or I threw in a bag of frozen turkey meatballs)
1 Tbsp. instant minced onion or 1 small onion, chopped
2 cloves garlic, minced
1 (1.5 oz.) pkg. dry spaghetti sauce mix or 1 Tbsp. brown sugar and 1 tsp. oregano
2 Tbsp. dried parsley flakes
1 (28 oz.) can tomatoes, slightly blended (my kids don't like chunks, so I really blend it.)
1 (16 oz.) can tomato sauce
1 (4 oz.) can mushrooms (I leave these out for our family.)
6 - 8 oz. whole wheat spaghetti
Brown ground beef with onion. Drain. Add seasonings, tomatoes, tomato sauce, and mushrooms. Stir to mix. Simmer 25-30 minutes. Cook spaghetti according to directions below.
Cook: 30 min. Yield: 4-6 servings
