Nat made this for me and brought it to me in bed during spring break this week. It was wonderful! She's a better cook than I am.
Ingredients1 pkg. bulk pork sausage (I think she used pre-cooked bacon, crumbled)
1 small red bell pepper, chopped (1/2 cup) She didn't use this, doesn't like 'em.
1 medium onion, chopped (1/2 cup) Didn't use this, either. I might have added dried onion.
1 1/2 c frozen shredded hash brown potatoes
1 cup shredded cheddar cheese (4 oz.)
1/2 cup Bisquick, or baking mix
1 cup milk
1//8 tsp. pepper
2 eggs
1. Heat oven to 400 deg. Spray 9: glass pie plate with cooking spray. (She used a metal round cake pan and it turned out great, too.)
2. In a 10" skillet, cook sausage, bell pepper and onion over medium heat 8-10 min, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.
3. In medium bowl, stir baking mix, milk, pepper and eggs until blended. Pour into pie plate.
4. Bake 30-35 min or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese; bake 1-2 min longer or just until cheese is melted. Let stand 5 minutes before serving.
Makes 6 servings.
