We conducted visiting teaching interviews tonight and Shari Hurst brought these fabulous, lumpy, bumpy cookies. I asked for the recipe because she and her husband are always bringing scrumptious cookies to any meeting they hold. Here it is. No wonder they're so yummy: check out the sugar and fat content!
"Here's Tad's cookie recipe. It's very versatile. Tonight, I added 3 cups of coconut, 3 cups of dried mango, and 4 cups of white chocolate chips and omitted the milk chocolate chips. Everything else is the same. " ~Shari
Tad's Chocolate Chip Oatmeal Cookies
1 cup shortening
1 cup butter, softened
1 1/2 cups sugar
1 1/2 cup brown sugar
1 tablespoon vanilla
2 eggs
3 cups flour
2 teaspoons soda
1 1/2 tsp cinnamon
3 cups oats
4 cups chocolate chips
Heat oven to 350 degrees.
Cream butter and sugars until fluffy.
Beat in eggs and vanilla.
In separate bowl, sift together flour, soda and cinnamon.
Stir flour mixture into sugar mixture.
Stir in chocolate chips and oats.
Form into balls on cookie sheets.
Bake 13 minutes or until just turning brown on the bottom and around the edges.
