Just in time for fall, the ward Relief Society had a recipe exchange. Here's one of the goodies that came out of that compilation, from Michelle Fanger:
4 eggs
2 c. sugar
1 c. oil
1 (16oz.) can pumpkin
2 c. flour
2 T. baking powder
2 tsp. cinnamon
1 tsp. baking soda
3/4 tsp. salt
1/2 tsp. ginger
1/4 tsp. ground cloves
Mix eggs, sugar, oil, pumpkin. Fold in dry ingredients. Pour into a half sheet baking pan (about 15 x9 inches) and bake at 350 deg. for 25-30 minutes, until center is done. Frost with cream cheese icing.
Cream Cheese Icing:
3 oz. cream cheese
1/4 c. plus 2 T. butter
1 tsp. vanilla
2 C. powdered sugar
Cream together cream cheese, butter and vanilla. Add powdered sugar and beat until creamy.
