This is a super easy breakfast to assemble and have ready for Christmas morning. It happens in our house every few years...when I'm on top of things. It came from the Raley's/Bel Air/ Nob Hill Foods flyer.
Maple Apple Sausage Patties
2 lb. ground pork
1 cup finely chopped green apple
1/2 cup finely chopped onion
1/3 cup maple syrup
2 1/2 tsp. sage leaves
salt and pepper to taste
In a medium bowl, mix together pork, apple, onion, syrup and sage. Shape into 1 1/2 -inch patties and season with salt and pepper. Fry in a large nonstick skillet over medium heat for 5-7 minutes per side or until pork is cooked through to an internal temperature of 160 deg. F.
Winter Fruit Salad
1 (20oz). can sliced pineapple , drained
3 oranges, peeled and sliced 1/4 inch thick (or 1 large can mandarin oranges)
2 pears, cored and cut into eighths
1 small jar (11.5 oz about) apricot, peach, or passion fruit preserves
1/2 cup dried cherries
3 tbsp. fresh lime juice
Place fruit in a shallow decorative serving bowl; set aside. Heat preserves, cherries and lime juice in a small saucepan until preserves are melted, about 5 minutes, or microwave on HIGH for 2 minutes or until warm. Pour over fruit, spreading over the entire surface. Serve immediately.
Orange Glazed Sweet Rolls
7 tbsp. softened butter, divided
1/2 cup brown sugar, divided
1/4 cup honey
2 tbsp. orange juice concentrate, thawed
1/3 package frozen bread dough (1 loaf), thawed
1 tsp. ground allspice
1/2 cup chopped walnuts
Melt 4 tbsp. butter, 1/4 cup brown sugar, honey and juice concentrate in the bottom of a 13-by-9-inch baking pan;set aside. Roll dough into a 10-by-12-inch rectangle on a lightly floured board. Spread remaining butter over the surface. Stir together remaining brown sugar and allspice; sprinkle over butter. Top with walnuts, pressing lightly into the dough. Roll up dough to make a 12-inch roll and pinch the seams to seal. Cut dough into 12 slices and place in prepared pan. Cover and refrigerate overnight. Remove from refrigerator 1 hour before baking. Preheat oven to 350 deg. F. Bake rolls, uncovered, for 20-25 minutes. Let cool slightly, then invert onto a serving platter. Serve warm. Makes 12 rolls.
