
When the kids were so sick last week, the Blossom Valley ward really rallied around us - offering prayers and food. Below is the recipe for an amazing chicken soup from Amy Lambert that warmed our hearts and souls.
There's a reason that "noodle" is before the "chicken" in the title! This was the first time I've made homemade noodles; it's kinda like dumplings, especially if you make them thick. The kids had a ball helping me knead the dough, roll it out and cut it with a pizza cutter.

Homemade Noodle & Chicken Soup
4-5 large chicken breasts
5 chicken bouillon cubes
1 large can chicken broth (or 2 for more broth)
6 eggs
3 cups flour
Salt & pepper to taste
- Dissolve cubes in a very large pot 1/2 filled with water. Add broth and bring to a simmer. Add chicken and simmer until chicken is done. Remove chicken and cut up into bite size pieces. Put aside for later.
- Combine together 3 cups of flour and 6 eggs. Knead the dough a few times. You should end up with a dough that is not too sticky. Form the dough into two equal balls.
- On a very floured surface, roll out the dough like you were going to make sugar cookies. Roll out to about 1/4 " thickness. This is not an exact science. Thicker dough makes thicker noodles. Cut the dough into 1/2" strips (roughly). I use a pizza cutter. Use extra flour to keep the cutter and the noodles from getting sticky. Place the cut noodles into a bowl and toss with more flour. Repeat with the other ball of dough. (You can make more or less noodles by just keeping with the egg to flour ratio of 1 egg: 1/2 cup flour.)
- Bring the broth to a boil and add noodles. Reduce heat and simmer until noodles are cooked through tender. This can take about 30 minutes. Add salt and pepper to taste. If the broth doesn't have enough chicken flavor - add more chicken bouillon. If your broth is not thick enough, make a slurry to thicken. (A slurry is lukewarm water and flour mixed together until thick. Just like if you were going to make gravy. Once added to the broth it will thicken more as it cooks.)
- When you're happy with your noodles and broth, add the chicken and let simmer for 10 minutes. Serve hot.
