Mandarin Tossed Salad


This is a great tasting, easy salad from Mom's collection. The caramelized almonds are a must!


1/2 head iceberg lettus

1 T. fresh parsley, minced

1 can mandarin oranges

1 c. chopped celery

2 green onions with tops, chopped

1/2 c. sliced almonds

2 T. sugar


Dressing

1/2 tsp. salt

2 T. sugar

1/4 salad oil

2 dashes pepper

2 T. red wine vinegar


Caramelize almonds by adding sugar and stirring over medium. Heat until sugar melts and collects on almonds. It will be caramel color. Cool. Combine lettuce, celery, parsley, onions, oranges and almonds. Toss well.

Dressing: Combine and shake well. Add at the very last minute to salad and serve immediately.
