Gehrig says, "These are the best!" Sneaky me - they've got fiber!
It's good that it makes a lot because I need some for the meeting tonight, the neighbors...oh, yeah..and the kids and hubby.
3 c. sugar
1 c. shortening
2 eggs

3 c. pumpkin
2 tsp. vanilla
1 tsp. baking soda
2 tsp. baking powder
2 tsp. salt
2 tsp. cinnamon
2 tsp. allspice
2 tsp. cloves
2 tsp. nutmeg
5 c. flour (I usually do 3 wheat, 2 white or all wheat if I can get away with it.)
12 oz. semi-sweet chocolate chips (I like mini-morsels)
Cream sugar and shortening well. Add eggs one at a time, mixing well after each. Add vanilla and pumpkin. Add dry ingredients. Drop onto greased cookie sheet. Bake at 375 deg. for 15 minutes (17 minutes for big ones on a stoneware sheet). Makes a lot!
