Zucchini Bread


3 eggs

1 c. oil

2 c. sugar

1 tsp. vanilla

1 tsp. cinnamon

1 tsp. salt

1 tsp. soda

1/4 tsp. powder

3 c. flour

2 c. zucchini, grated

1 c. nuts, raisins (optional)


Beat eggs until light and fluffy. Add oil, sugar, vanilla and zucchini. Sift together dry ingredients and add. Pour into loaf pans; let stand 5 minutes. Bake for 1 hour at 325 deg.
