Blueberry Frenchtoast
12 slices white bread
1 1/2 --8oz packages of cream cheese (12oz)
12 eggs
1/3 c maple syrup
2 cups milk
1 cup blueberries
grease a 9 X 13' pan
cut or tear bread into small pieces, layer 1/2 of them on bottom of pan
cut cream cheese in 1' cubes, add to layer of bread in pan
add 1 cup layer of blueberries over bread/cream cheese
top with remaining bread cubes
in a large bowl:
beat the 12 eggs and milk and syrup together--pour over layers in baking pan
bake @ 350* covered for 30 minutes , remove cover and bake 30 minutes more.
sauce:
1 cup sugar
1 c water
2 tsp cornstarch
1 cup blueberries
1 tsp butter
boil water sugar and cornstarch for 3 minutes, add butter and blueberries.
can pour over entire pan, or leave for them to pour
Note: I make my own bread and cut it up and we love strawberries for this recipe but any fruit will work. Enjoy!"
