Frog Eye Salad

Also know as, Acini De Pepe, this is a classic cold sweet summer salad or dessert.


Ingredients

1 1/2 cups acini pasta
1 cup sugar
1/2 t. salt
1 1/3 cup pineapple juice
1T lemon juice
1 1/2 Tbsp. flour
2 eggs

pineapple tidbits, drained and juice reserved
crushed pineapple, drained and juice reserved, as possible
2 cans mandarine oranges, drained
small tub of Cool Whip
sliced almonds (optional)
bananas (optional)
mini-marshmallows (optional)

Cook acini in boiling water 20 minutes. Rinse until cool. Combine sugar, salt, pineapple juice, lemon juice, flour and eggs and cook until thick. Stir in cooked acini. Refrigerate overnight.

Next, stir in pineapple and mandarin oranges. Fold in Cool Whip and marshmallows, if using. Top with almonds and sliced bananas, just before serving.
