Leith's Cream Cheese Mints

I remember Aunt Leith teaching us girls how to make these on our trip to Colorado, after they'd made a trillion for Gayle & Clay's wedding.





2 1/2 cups powdered sugar

3 oz. cream cheese

1/2 tsp. flavoring, (peppermint, orange, cherry...)

coloring as desired



Mix the above ingredients together and knead as for pie dough. Roll marble sized balls. Press one side into granulated sugar, then press dough, sugar side down into mold. Release candy from mold at once onto waxed paper.

Variation: For chocolate mints, add 3 Tbsp. cocoa and substitute 1/2 tsp. vanilla for peppermint flavoring.

    1. Sorry for the late reply. I didn't realize anyone was actually following my cooking blog! The amount of mints depends on the size you make - small canyd molds make tons! That's what I recommend, as they are very rich.
