Apple Crisp


3/4 cup margarine, softened
3/4 c. flour
3/4 c. brown sugar
3/4 c. quick oats
1/8 t. salt

4 to 6 apples, peeled, cored and sliced
cinnamon to taste
1/4 c. sugar

Mix first 5 ingredients until crumbly, set aside.  Place apples in a 13"x9" pan; sprinkle with cinnamon and sugar.  Place brown sugar topping over all and bake at 375 deg. for 30 minutes, or until topping is lightly browned and crunchy.


Here's another version, from the Land O Lakes butter wrapper. I love the addition of dried apricots to the filling!


Topping
1/4 cup uncooked quick-cooking oats

1/4 cup whole wheat flour
1/4 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon

1/8 teaspoon salt

1/4 cup cold stick Land O Lakes® Light Butter, cut into chunks

Filling
1/3 cup firmly packed brown sugar

1/4 cup chopped dried apricots

1 tablespoon whole wheat flour

1 teaspoon freshly grated orange zest

1/2 teaspoon ground cinnamon

1/8 teaspoon salt

4 to 5 (6 cups) apples, peeled, cored, cut into chunks ( I used reconstituted dried apples from storage.)

Directions

Heat oven to 350°F. Spray 8-inch square or 2-quart glass baking dish with no-stick cooking spray; set aside.

Combine all topping ingredients except light butter in medium bowl; cut in light butter with pastry blender or fork until mixture resembles coarse crumbs.

Place all filling ingredients except apples in large bowl; mix well. Add apples; toss to coat evenly. Spoon apple mixture into baking dish; sprinkle evenly with topping. Bake for 40 to 50 minutes or until apples are tender and topping is lightly browned.

Serve warm or at room temperature.
